How To Make Red Pepper, Mozzarella & Spinach Melts

Serves:

Ingredients

  • 4 red peppers, cut into strips
  • 8 slices of mozzarella cheese
  • 2 cups of fresh spinach leaves
  • 4 ciabatta rolls
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the red pepper strips on a baking sheet and drizzle with olive oil. Season with salt and pepper.

  3. Roast the red peppers in the preheated oven for 10-15 minutes until they are tender.

  4. Meanwhile, slice the ciabatta rolls in half and lay them on a baking sheet.

  5. Layer each half of the ciabatta rolls with a slice of mozzarella cheese, followed by a handful of spinach leaves and roasted red pepper strips. Season with salt and pepper.

  6. Place the ciabatta melts in the oven for 5-7 minutes until the cheese is melted and the bread is toasted.

  7. Serve the red pepper, mozzarella, and spinach melts warm.
