How To Make Red Pepper, Mozzarella & Spinach Melts

Ingredients
- 4 red peppers, cut into strips
- 8 slices of mozzarella cheese
- 2 cups of fresh spinach leaves
- 4 ciabatta rolls
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Place the red pepper strips on a baking sheet and drizzle with olive oil. Season with salt and pepper.

Roast the red peppers in the preheated oven for 10-15 minutes until they are tender.

Meanwhile, slice the ciabatta rolls in half and lay them on a baking sheet.

Layer each half of the ciabatta rolls with a slice of mozzarella cheese, followed by a handful of spinach leaves and roasted red pepper strips. Season with salt and pepper.

Place the ciabatta melts in the oven for 5-7 minutes until the cheese is melted and the bread is toasted.

Serve the red pepper, mozzarella, and spinach melts warm.
