Ingredients

  • 300g pasta
  • 300g Brussels sprouts, halved
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Cook the pasta according to package instructions. Drain and set aside.

  3. Place the Brussels sprouts on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the preheated oven for 15-20 minutes until tender and lightly charred.

  4. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.

  5. Gradually whisk in the milk and cook until thickened, about 5 minutes.

  6. Remove the saucepan from heat and stir in the cheddar cheese until melted and smooth.

  7. In a large mixing bowl, combine the cooked pasta, roasted Brussels sprouts, and cheese sauce. Mix well to coat everything evenly.

  8. Transfer the mixture to a greased baking dish and sprinkle with grated Parmesan cheese.

  9. Bake in the preheated oven for 15-20 minutes, until bubbly and golden on top.

  10. Serve hot and enjoy!
