How To Make Meatloaf Muffins

Our recipe for these meatloaf muffins tops it off with a tomato-based zesty savory glaze. You can make this recipe ahead of meals or for leftovers.

For Meatloaf Muffin:

  • ½onion,finely diced
  • lblean ground beef
  • ½green pepper,finely diced
  • ¾cupseasoned bread crumbs
  • ¼cupbarbecue sauce
  • 1tbspWorcestershire sauce
  • 1egg
  • 2tbspparsley
  • salt & pepper,to taste

For Glaze:

  • cupketchup
  • cupchili sauce
  • 1tbspbrown sugar


  1. Preheat oven to 425 degrees F. Grease a muffin pan and set aside.


  1. Combine glaze ingredients. Set aside.

Meatloaf Muffin:

  1. Cook onion over medium heat in 1 tablespoon of olive oil for 5 minutes or until tender. Cool completely.

  2. Combine all ingredients plus ¼ cup of the glaze mixture. Mix until well combined.

  3. Divide mixture over 10 muffin wells. Top each meatloaf with 1 tablespoon of the glaze mixture.

  4. Bake 22 to 26 minutes or until cooked through and beef is 160 degrees F. Rest 5 minutes before serving.
