How To Make Vodka Flamed Chorizo

Ingredients
- 4 chorizo sausages
- 1/4 cup vodka
- 1 tbsp olive oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1/2 tsp salt
- Fresh parsley, for garnish
Instructions

Heat olive oil in a large skillet over medium heat.

Add the sliced onion and minced garlic, and cook until softened.

Add the sliced red bell pepper and cook for another 2 minutes.

Push the vegetables to the sides of the skillet and add the chorizo sausages to the center. Cook until browned on all sides.

Remove the skillet from heat and carefully pour in the vodka. Ignite the vodka with a long lighter or match and let it flame for a few seconds.

Season the dish with smoked paprika, chili powder, and salt. Stir well to coat everything evenly.

Reduce the heat to low and cover the skillet. Let it simmer for about 10 minutes, or until the chorizo is cooked through and flavors are well combined.

Remove from heat and garnish with fresh parsley.

Serve hot as an appetizer or with crusty bread.
