Ingredients

  • 1 lb ground chicken
  • 1/2 cup cooked quinoa
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small head cauliflower, cut into florets
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a large bowl, combine the ground chicken, cooked quinoa, breadcrumbs, Parmesan cheese, chopped parsley, garlic powder, dried oregano, salt, and black pepper. Mix until well combined.

  3. Shape the mixture into meatballs, about 1-2 tablespoons each, and place them on the prepared baking sheet. Bake for 20-25 minutes, or until cooked through and golden brown.

  4. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the cauliflower florets and cook for 5 minutes, until slightly softened.

  5. In a small bowl, whisk together the curry powder, turmeric, cumin, cayenne pepper, and vegetable broth. Pour the mixture over the cauliflower and stir to coat evenly. Cook for an additional 5-7 minutes, until the cauliflower is tender and coated with the curry mixture.

  6. Serve the chicken meatballs with quinoa and curried cauliflower. Enjoy!
