Ingredients

  • 1 lb of chicken breast, cut into 1-inch cubes
  • 1 red bell pepper, seeded and cut into chunks
  • 1 green bell pepper, seeded and cut into chunks
  • 1 red onion, cut into chunks
  • 8 cherry tomatoes
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • 2 cloves of garlic, minced
  • 2 teaspoons of paprika
  • 1 teaspoon of ground cumin
  • Salt and pepper, to taste

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and pepper.

  2. Add the chicken cubes to the marinade and toss until well coated. Let it marinate for at least 15 minutes, or up to overnight in the refrigerator.

  3. Preheat your grill or grill pan over medium-high heat.

  4. Thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto skewers, alternating the ingredients.

  5. Grill the skewers for about 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred.

  6. Remove the skewers from the grill and let them rest for a few minutes before serving.

  7. Serve the kabobs hot with your favorite side dishes or on a bed of rice. Enjoy!
