Ingredients

  • 8 corn tortillas
  • Vegetable oil, for frying
  • Salt, to taste
  • 2 ripe avocados
  • 1 lime, juiced
  • 1/4 cup diced onion
  • 1/4 cup chopped cilantro
  • 1 jalapeno, seeded and minced
  • 2 tomatoes, charred and diced
  • 1/2 red onion, diced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • Salt, to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Cut each tortilla into quarters to create triangle-shaped chips.

  3. Heat vegetable oil in a deep saucepan over medium-high heat.

  4. Fry the tortilla chips in batches until crispy and golden brown. Remove them from the oil and drain on paper towels. Sprinkle with salt.

  5. In a bowl, mash the avocados with a fork until smooth. Stir in the lime juice, diced onion, chopped cilantro, and minced jalapeno. Season with salt to taste.

  6. To make the charred tomato salsa, place the tomatoes on a hot grill or directly over an open flame until charred. Let them cool, then dice and combine with diced red onion, chopped cilantro, lime juice, and salt.

  7. Serve the homemade tortilla chips with the guacamole and charred tomato salsa.
