Ingredients

  • 500g boneless chicken, cut into small pieces
  • 2 tablespoons green curry paste
  • 1 can (400ml) coconut milk
  • 1 cup green beans, trimmed
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. In a large pan, heat some oil and add the chicken pieces. Cook until they are browned on all sides.

  2. Add the green curry paste and cook for 2-3 minutes until fragrant.

  3. Pour in the coconut milk and bring to a simmer.

  4. Add the green beans, broccoli, and bell peppers. Cook for 5-7 minutes until the vegetables are tender.

  5. Stir in the fish sauce, brown sugar, and lime juice. Cook for another minute.

  6. Serve the Speedy Green Chicken Curry over cooked rice and garnish with fresh cilantro.
