  • 4 medium-sized potatoes, peeled and diced
  • 1 cup corn kernels
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.

  2. Add the diced potatoes and corn kernels to the pot. Stir to coat them with the melted butter.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat to low and let simmer for 15-20 minutes or until the potatoes are tender.

  4. Using a potato masher or immersion blender, partially puree the soup to thicken it while still leaving some chunks of potatoes for texture.

  5. Stir in the milk and season with salt and pepper to taste. Cook for an additional 5 minutes.

  6. Serve the soup hot, garnished with freshly chopped parsley.
