Ingredients
- 2 cans of shoepeg corn, drained
- 1 cup of sour cream
- 1 cup of shredded cheddar cheese
- 1/2 cup of mayonnaise
- 1/4 cup of diced onion
- 1/4 cup of diced red bell pepper
- 1/4 cup of diced green bell pepper
- 1/4 cup of melted butter
- 1/4 cup of crushed Ritz crackers
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
Instructions

Preheat the oven to 350°F (175°C).

In a large bowl, mix together the shoepeg corn, sour cream, cheddar cheese, mayonnaise, onion, red bell pepper, green bell pepper, melted butter, salt, and black pepper.

Transfer the mixture to a greased baking dish.

Sprinkle the crushed Ritz crackers on top.

Bake for 30 minutes or until the casserole is hot and bubbly.
