Ingredients

  • 2 cans of shoepeg corn, drained
  • 1 cup of sour cream
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of mayonnaise
  • 1/4 cup of diced onion
  • 1/4 cup of diced red bell pepper
  • 1/4 cup of diced green bell pepper
  • 1/4 cup of melted butter
  • 1/4 cup of crushed Ritz crackers
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix together the shoepeg corn, sour cream, cheddar cheese, mayonnaise, onion, red bell pepper, green bell pepper, melted butter, salt, and black pepper.

  3. Transfer the mixture to a greased baking dish.

  4. Sprinkle the crushed Ritz crackers on top.

  5. Bake for 30 minutes or until the casserole is hot and bubbly.

  6. Remove from the oven and let it cool for a few minutes before serving.
