  • 2 cans of shoepeg corn, drained

  • 1/4 cup of chopped fresh cilantro
  • 2 tablespoons of olive oil
  • 2 tablespoons of white vinegar
  • 1 tablespoon of sugar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shoepeg corn, red bell pepper, green bell pepper, red onion, and cilantro.
