Ingredients

  • 1 9-inch pie crust
  • 2 cups cooked turkey, shredded
  • 1 cup frozen mixed vegetables
  • 1/2 cup diced onions
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, melt the butter over medium heat. Add the onions, carrots, and celery. Cook until the vegetables are tender.

  3. Stir in the flour and cook for 1 minute. Gradually add the chicken broth and milk, stirring constantly until the mixture thickens.

  4. Add the turkey and frozen vegetables, and cook for an additional 5 minutes, until heated through. Season with salt and pepper.

  5. Pour the turkey mixture into a 9-inch pie dish. Place the pie crust over the filling and press the edges to seal. Cut slits in the crust to allow steam to escape.

  6. Bake for 30-35 minutes, until the crust is golden brown and the filling is bubbly.

  7. Let it cool for a few minutes before serving. Enjoy!
