Ingredients

  • 4 haddock fillets
  • 1 lemon, zest and juice
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 4 large potatoes, peeled and cut into quarters
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix together the lemon zest, lemon juice, minced garlic, and olive oil.

  3. Place the haddock fillets in a baking dish and pour the lemon mixture over them. Season with salt and pepper.

  4. Bake the haddock in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. While the haddock is baking, place the potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender.

  6. Drain the potatoes and return them to the pot. Crush the potatoes using a potato masher or fork. Season with salt and pepper.

  7. In a separate pot, cook the frozen peas according to package instructions.

  8. Serve the baked haddock on a bed of crushed potatoes, with a side of peas. Garnish with fresh parsley.
