Ingredients

  • 1 lb smoked haddock fillets
  • 1 lb new potatoes, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • 2 tbsp maple syrup

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions and garlic, sauté until softened.

  2. Add the flour to the pot, stirring constantly for 1 minute to cook out the raw flour taste.

  3. Slowly pour in the vegetable broth, stirring continuously to remove any lumps.

  4. Add the diced potatoes to the pot and simmer for 10 minutes until they are tender.

  5. In a separate pan, poach the haddock fillets in milk for about 5-7 minutes until they are cooked through and flake easily.

  6. Remove the haddock from the milk and flake it into the soup pot.

  7. Stir in the heavy cream and season with salt and pepper to taste.

  8. In a small saucepan, heat the maple syrup over low heat until warmed through.

  9. Ladle the soup into bowls and drizzle with the warm maple syrup.

  10. Serve hot and enjoy!
