How To Make Greens, Potato & Chorizo Soup

Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 chorizo sausage, sliced
- 2 potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 4 cups mixed greens (spinach, kale, Swiss chard), chopped
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened.

Add the chorizo and cook until browned and crispy.

Add the potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.

Stir in the mixed greens and cook for an additional 5 minutes until wilted.

Season with salt and pepper.
