Ingredients

  • 1.5 kg shoulder of lamb
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup dried cranberries
  • 1 cup dried apricots, chopped
  • 1 cup pistachios, chopped
  • 1 cup breadcrumbs
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper, to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 325°F (160°C).

  2. In a large pan, heat the olive oil over medium heat.

  3. Sear the shoulder of lamb on all sides until browned. Remove from the pan and set aside.

  4. In the same pan, add the diced onion and minced garlic. Sauté until softened.

  5. In a separate bowl, combine the dried cranberries, dried apricots, pistachios, breadcrumbs, cumin, coriander, salt, and pepper.

  6. Place the lamb shoulder on a cutting board and make a deep slit in the center to create a pocket for the stuffing.

  7. Stuff the lamb with the jewelled stuffing mixture, pressing it firmly into the pocket.

  8. Transfer the lamb to a roasting pan and pour the chicken or vegetable broth into the pan.

  9. Cover the roasting pan with foil and place in the preheated oven.

  10. Bake for approximately 2.5-3 hours, or until the lamb is tender.

  11. Remove the foil during the last 30 minutes of cooking to allow the lamb to brown.

  12. Once cooked, remove the lamb from the oven and let it rest for 10 minutes before carving.

  13. Serve the braised shoulder of lamb with the jewelled stuffing and enjoy!
