Ingredients

  • 1 cup dates, pitted and chopped
  • 1 cup warm water
  • 1 tsp baking soda
  • 2 tbsp butter, melted
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 cup chopped walnuts
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan and set aside.

  2. In a small bowl, combine the chopped dates and warm water. Let it sit for 10 minutes to soften the dates.

  3. In a large mixing bowl, whisk together the baking soda, melted butter, brown sugar, and vanilla extract until well combined.

  4. Add the flour, chopped walnuts, and salt to the mixing bowl. Stir until just combined, being careful not to overmix.

  5. Drain the softened dates and fold them into the batter.

  6. Pour the batter into the prepared loaf pan and smooth the top.

  7. Bake for 55 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
