Ingredients

  • 1 butternut squash, peeled, seeded, and cubed
  • 1 red onion, sliced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/2 cup pistachios, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large mixing bowl, combine the butternut squash, red onion, olive oil, salt, and pepper. Toss well to coat.

  3. Spread the squash and onion mixture evenly on a baking sheet.

  4. Roast in the preheated oven for 25-30 minutes, or until the squash is tender and slightly caramelized.

  5. Remove the baking sheet from the oven and sprinkle the roasted squash and onion with the chopped pistachios.
