Ingredients

  • 1 lb pork tenderloin, cut into 1-inch cubes
  • 1 cup pineapple chunks
  • 2 tablespoons ancho chili powder
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Preheat the grill to medium-high heat.

  2. In a small bowl, combine the ancho chili powder, olive oil, honey, soy sauce, garlic, cumin, salt, and pepper to make the glaze.

  3. Thread alternating pieces of pork and pineapple onto the skewers.

  4. Brush the glaze generously over the skewers, reserving some for basting while grilling.

  5. Grill the skewers for about 8-10 minutes, turning occasionally and basting with the remaining glaze, until the pork is cooked through.

  6. Serve the skewers with salsa on the side.
