Ingredients

  • 1 lb belly pork, sliced into strips
  • 1 cup pineapple chunks
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream

Instructions

  1. In a large bowl, combine soy sauce, brown sugar, garlic powder, cumin, and chili powder. Add belly pork strips and pineapple chunks to the mixture and mix well. Let marinate for 10 minutes.

  2. Heat a skillet over medium-high heat and add the marinated belly pork and pineapple. Cook for 8-10 minutes until the pork is cooked through and caramelized.

  3. Warm the flour tortillas in a dry skillet or microwave.

  4. Assemble the burritos by placing a spoonful of cooked rice on each tortilla, followed by the belly pork and pineapple mixture. Top with diced tomatoes, chopped cilantro, and a dollop of sour cream.

  5. Roll up the burritos tightly, tucking in the sides as you go.

  6. Serve the belly pork & pineapple burritos with extra sour cream or your favorite salsa.
