How To Make Wild Rice Pilaf with Cranberries and Apples

Make a hearty meal with this wild rice pilaf recipe that's made with wild rice, dried cranberries, almonds and Granny Smith apples.

  • 1 ½ cup wild rice
  • 3 cups water
  • ½ cup dried cranberries
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp sugar
  • 2 Granny Smith apples, cored and diced
  • ¼ cup almonds slivered , toasted


  1. In a medium-sized bowl, rinse and drain the wild rice.
  2. Bring 3 cups of water to a boil in a medium saucepan.

  3. Add the rice.
  4. Reduce heat and simmer, covered, until tender, about 45 minutes.
  5. Stir in the dried cranberries.
  6. Remove from heat and let stand.
  7. In a small bowl, mix together the oil, red wine vinegar and sugar.
  8. In a large bowl, combine the rice and the diced apples.
  9. Add the oil mixture and toss.
  10. Serve warm or cold on individual plates.
  11. Top with toasted slivered almonds.
