Ingredients

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 cup diced onion
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cut off the tops of the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.

  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

  4. In the same skillet, add the diced onion, minced garlic, salt, black pepper, dried oregano, and dried basil. Cook until the onion is softened.

  5. Stir in the cooked rice and diced tomatoes. Cook for an additional 2-3 minutes.

  6. Spoon the beef and rice mixture into the bell peppers. Top each pepper with shredded cheese.

  7. Cover the baking dish with foil and bake for 25 minutes.

  8. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

  9. Serve the baked stuffed peppers hot and enjoy!
