How To Make Mediterranean Turkey-Stuffed Peppers

Ingredients
- 4 bell peppers, halved and seeded
- 1 lb ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked quinoa
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp dried thyme
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
- Olive oil for drizzling
Instructions

Preheat the oven to 375°F (190°C).

Place the bell pepper halves on a baking sheet and set aside.

In a large skillet, heat olive oil over medium heat. Add the ground turkey, onion, and garlic. Cook until the turkey is browned and the onion is softened.

Stir in the cooked quinoa, feta cheese, parsley, oregano, cumin, thyme, red pepper flakes, salt, and pepper. Cook for an additional 2-3 minutes until well combined.

Spoon the turkey filling into the bell pepper halves, pressing down gently to fill.

Drizzle olive oil over the stuffed peppers and bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is heated through.
