Ingredients

  • 8 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup cooked corn kernels
  • 1/2 cup salsa
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, chopped (optional)

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, whisk together eggs, milk, salt, and black pepper.

  3. Stir in onions, bell peppers, black beans, corn, and salsa until well mixed.

  4. Pour mixture into a greased 9×9 inch baking dish.

  5. Sprinkle cheese evenly over the top.

  6. Bake in preheated oven for 20-25 minutes, or until eggs are set and cheese is melted and bubbly.

  7. Serve hot, garnished with chopped cilantro if desired.
