How To Make One-Pot Harissa Chicken
A spicy and flavorful dish that combines tender chicken with a kick of harissa sauce.

Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons harissa paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1 can chopped tomatoes (400g)
- 1 cup chicken broth
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
Instructions

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chicken thighs, skin side down, and cook until golden brown. Flip and cook for another 2 minutes. Remove the chicken and set aside.

In the same pot, add the diced onion and minced garlic. Sauté until fragrant.

Add the harissa paste, cumin, coriander, and smoked paprika. Stir and cook for 1 minute.

Pour in the chopped tomatoes and chicken broth. Stir to combine.

Return the chicken thighs to the pot, skin side up. Season with salt and pepper.

Cover the pot and simmer for 20-25 minutes, or until the chicken is cooked through and tender.

Serve the One-Pot Harissa Chicken garnished with fresh cilantro.
