Ingredients

  • 1 whole chicken (about 3-4 pounds)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 lemon, juiced
  • 1 cup dried apricots
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, mix together the cumin, ginger, cinnamon, paprika, turmeric, coriander, and cayenne pepper (if using).

  3. Rub the chicken with olive oil, then sprinkle the spice mixture all over the chicken, making sure to evenly coat it.

  4. In a roasting pan, place the chopped onion, minced garlic, and dried apricots. Place the seasoned chicken on top.

  5. Drizzle the honey and lemon juice over the chicken.

  6. Season with salt and pepper to taste.

  7. Cover the roasting pan with aluminum foil and roast in the preheated oven for 1 hour.

  8. Remove the foil and continue roasting for an additional 30 minutes, or until the chicken is golden brown and cooked through.

  9. Remove from the oven and let the chicken rest for a few minutes before carving.

  10. Serve the Moroccan roast chicken with apricots, garnished with fresh cilantro or parsley.
