How To Make Kleftiko-style Lamb Shanks

Ingredients
- 4 lamb shanks
- 2 tbsp olive oil
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup chicken broth
- 1 lemon, juice and zest
- 1/4 cup fresh parsley, chopped
Instructions

Preheat the oven to 325°F (160°C).

In a large oven-safe pot, heat the olive oil over medium-high heat. Brown the lamb shanks on all sides, then remove from the pot and set aside.

In the same pot, sauté the onion and garlic until softened and lightly golden.

Add the dried oregano, dried thyme, ground cumin, paprika, salt, and black pepper to the pot. Stir well to coat the onions and garlic with the spices.

Return the lamb shanks to the pot and pour in the chicken broth. Add the lemon juice and zest. Stir to combine.

Cover the pot with a lid and transfer it to the preheated oven. Cook for 4 hours, or until the lamb is tender and falls off the bone.

Remove the pot from the oven and sprinkle with fresh parsley before serving.
