How To Make Greek Lamb Tray Bake

- 1.5 lbs (700g) lamb shoulder, boneless and cubed
- 1 large red onion, sliced
- 2 bell peppers, sliced
- 1 large zucchini, sliced
- 1 cup cherry tomatoes
- 3 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- Juice of 1 lemon
Instructions

Preheat the oven to 400°F (200°C).

In a large baking tray, toss the lamb, red onion, bell peppers, zucchini, cherry tomatoes, and minced garlic.

Drizzle with olive oil and sprinkle with dried oregano, dried thyme, dried rosemary, salt, and pepper.

Use your hands to mix everything together, ensuring the lamb and vegetables are evenly coated with the herbs and seasonings.

Roast in the preheated oven for 40-45 minutes, or until the lamb is cooked to your desired level of doneness and the vegetables are tender.

Remove from the oven and squeeze the lemon juice over the entire tray bake.
