How To Make Portuguese Rice Pudding

Creamy and delicious dessert made of rice, milk, and sugar with a touch of cinnamon.

Serves:

Ingredients

  • 1 cup of short-grain rice
  • 1 cup of water
  • 1 cinnamon stick
  • 1 can of sweetened condensed milk
  • 2 cups of whole milk
  • 1/2 cup of granulated sugar
  • 1/4 tsp of salt
  • 1 egg yolk
  • Ground cinnamon for garnish

Instructions

  1. In a medium-sized saucepan, bring the rice, water, and cinnamon stick to a boil. Reduce heat and simmer covered, stirring occasionally, for 15 minutes or until the rice is tender and the water has been absorbed.

  2. Remove the cinnamon stick and stir in the condensed milk, whole milk, sugar, and salt over medium heat until well combined.

  3. In a small bowl, beat the egg yolk and quickly stir into the rice mixture.

  4. Cook for an additional 15-20 minutes, stirring constantly, until the pudding thickens and coats the back of a spoon. Remove from heat.

  5. Allow the pudding to cool for 10-15 minutes before serving. Sprinkle with ground cinnamon on top for garnish.
