How To Make Caraway and Lemon Thyme Roasted Chicken Recipe
A succulent roasted chicken with a zesty, herbaceous twist.

Ingredients
- 1 whole chicken (around 1.5kg)
- 2 lemons, halved
- 4 garlic cloves, crushed
- 2 tsp caraway seeds
- 4-5 sprigs of lemon thyme
- 3 tbsp olive oil
- Salt and black pepper to taste
Instructions

Preheat your oven to 190°C (170°C fan)/375°F/gas mark 5.

Season the chicken generously with salt and black pepper, and place it in a roasting tray.

Stuff the cavity of the chicken with the halved lemons, garlic cloves, caraway seeds, and lemon thyme sprigs.

Drizzle the chicken with olive oil, and rub it into the skin and inside the cavity.

Roast the chicken in the oven for around 1 hour and 15 minutes, or until the skin is crispy and the juices run clear when you insert a knife into the thickest part.

Allow the chicken to rest for at least 10 minutes before carving and serving.
