How To Make Caraway-Roasted Carrot & Feta Salad

Ingredients
- 4 large carrots, peeled and cut into thin strips
- 2 tablespoons olive oil
- 1 teaspoon caraway seeds
- Salt and pepper, to taste
- 4 cups mixed salad greens
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped walnuts
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, toss the carrot strips with olive oil, caraway seeds, salt, and pepper.

Spread the coated carrots onto a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are tender and slightly browned.

In a serving bowl, place the mixed salad greens. Top with the roasted carrots, crumbled feta cheese, chopped parsley, and walnuts.

Toss the salad gently to combine all the ingredients.
