Ingredients

  • 4 large carrots, peeled and cut into thin strips
  • 2 tablespoons olive oil
  • 1 teaspoon caraway seeds
  • Salt and pepper, to taste
  • 4 cups mixed salad greens
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the carrot strips with olive oil, caraway seeds, salt, and pepper.

  3. Spread the coated carrots onto a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are tender and slightly browned.

  4. In a serving bowl, place the mixed salad greens. Top with the roasted carrots, crumbled feta cheese, chopped parsley, and walnuts.

  5. Toss the salad gently to combine all the ingredients.
