Ingredients

  • 3 medium sized beets, peeled and chopped
  • 1 tablespoon olive oil
  • 1 teaspoon caraway seeds
  • ½ teaspoon salt
  • 1 head of lettuce, chopped
  • ¼ cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F.

  2. In a baking sheet, toss beets with olive oil, caraway seeds, and salt. Roast for 40 minutes, or until tender.

  3. In a large bowl, combine roasted beets with lettuce. Top with crumbled feta cheese.
