How To Make Parsley Quinoa Salad

This refreshing salad is packed with protein and flavor.

Serves:

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup chopped parsley
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped cherry tomatoes
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa and cook in water according to instructions on package.

  2. Fluff quinoa and let it cool.

  3. In a bowl, mix together parsley, red onion, cucumber and cherry tomatoes.

  4. Add the cooled quinoa to the bowl.

  5. Drizzle olive oil and lemon juice over the salad and mix well.

  6. Season with salt and pepper to taste.

  7. Top with crumbled feta cheese before serving.
