How To Make Whole Grain Quinoa Salad
A healthy salad made with whole grain quinoa, fresh vegetables, and a tangy dressing.

Ingredients
- 1 cup uncooked quinoa, rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp honey
- Salt and pepper to taste
Instructions

Cook quinoa according to package instructions and set aside to cool.

In a large bowl, combine cooled quinoa, bell peppers, red onion, cherry tomatoes, parsley, and mint.

In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to make the dressing.

Pour dressing over salad and toss to combine.
