Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 1 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 cup of cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh oregano leaves
  • 1/4 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the chickpeas, red onion, red bell pepper, cherry tomatoes, cucumber, parsley, and oregano leaves.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve immediately or refrigerate until ready to serve.
