Ingredients

  • 1 large sweet potato, peeled and cubed
  • 2 carrots, peeled and sliced
  • 2 parsnips, peeled and sliced
  • 1 red onion, sliced
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 3 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F.

  2. In a large bowl, toss together the sweet potato, carrots, parsnips, red onion, minced garlic, and bay leaves with olive oil.

  3. Season with salt and pepper to taste.

  4. Spread out vegetables evenly on a baking sheet.

  5. Roast in preheated oven for 30 minutes or until vegetables are tender and golden brown.

  6. Remove bay leaves and serve hot.
