  • 1 cup dried navy beans, soaked overnight
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bay leaf
  • 4 cups chicken or vegetable broth
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. Drain and rinse the soaked navy beans in cold water.

  2. In a pot, sauté the onion and garlic until fragrant.

  3. Add the carrots and celery, and cook until vegetables are slightly softened.

  4. Add the navy beans, bay leaf, broth, thyme, salt, and pepper.

  5. Bring to a boil, then reduce heat and simmer for 1 hour, or until beans are tender.

  6. Remove bay leaf and serve hot.
