How To Make Bay Leaf and Citrus Cured Salmon Recipe

Citrusy cured salmon infused with the fragrance of bay leaves – a perfect appetizer for any occasion.

Ingredients

  • 300g fresh salmon fillet, skin on
  • 10g sea salt
  • 5g brown sugar
  • 1 bay leaf
  • 1 lemon, zested
  • 1 orange, zested

Instructions

  1. Combine the salt, sugar, lemon zest, orange zest, and bay leaf in a small bowl.

  2. Place the salmon fillet, skin side down, on a piece of cling film.

  3. Rub the salt mixture evenly onto the flesh of the salmon.

  4. Wrap the salmon tightly in cling film and refrigerate for 24 hours.

  5. After 24 hours, remove the cling film and rinse the salmon under cold running water to remove the cure mixture.

  6. Pat the salmon dry with a paper towel and slice it thinly.

  7. Serve chilled with your choice of garnish.
