Ingredients

  • 1 lb fresh salmon fillet
  • 1 cup kosher salt
  • 1/2 cup granulated sugar
  • 2 lemons, zested
  • 1 orange, zested
  • 1/4 cup fresh dill, chopped
  • 1 tbsp black peppercorns, crushed

Instructions

  1. In a bowl, mix together the salt, sugar, lemon zest, orange zest, dill, and black peppercorns.

  2. Place the salmon fillet skin side down on a large piece of plastic wrap.

  3. Spread the salt mixture evenly over the flesh side of the salmon.

  4. Wrap the salmon tightly in the plastic wrap and place in a baking dish.

  5. Place a weighted object, like a heavy can, on top of the salmon to press it down.

  6. Refrigerate for 24 hours, flipping the salmon every 6 hours.

  7. After 24 hours, remove the salmon from the plastic wrap and rinse off the salt mixture.

  8. Pat the salmon dry with paper towels and slice thinly.

  9. Serve chilled with your favorite accompaniments.
