Ingredients

  • 4 cups of mixed winter greens (such as kale, spinach, and arugula)
  • 1 cup of pitted dates, chopped
  • 1/2 cup of pitted green olives, sliced
  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of balsamic vinegar
  • Salt and pepper to taste
  • 1/4 cup of crumbled feta cheese (optional)

Instructions

  1. In a large bowl, combine the mixed winter greens, chopped dates, and sliced green olives.

  2. In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt, and pepper until well combined.

  3. Pour the dressing over the salad and toss to coat evenly.

  4. Optional: sprinkle with crumbled feta cheese before serving.

  5. Serve immediately and enjoy!
