How To Make Easy Lamb Stew

Serves:

Ingredients

  • 1.5 pounds of lamb stew meat, cut into cubes
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • 4 cups of beef broth
  • 1 cup of red wine (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb cubes and brown them on all sides.

  2. Remove the lamb from the pot and set it aside. Add the diced onion, carrots, celery, and minced garlic to the pot and sauté until the vegetables are softened.

  3. Return the lamb to the pot and sprinkle in the dried thyme. Add the bay leaf, beef broth, and red wine (if using).

  4. Bring the stew to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the lamb is tender.

  5. Taste the stew and season with salt and pepper as needed.

  6. Remove the bay leaf before serving. Serve the lamb stew hot with crusty bread or over mashed potatoes.
