Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp ground turmeric
  • 1 cup dried lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté for 2-3 minutes until softened.

  2. Add celery, carrots, cumin, paprika, and turmeric. Stir to combine and cook for 5 minutes.

  3. Add lentils, vegetable broth, and bay leaf. Bring to a simmer and cover with a lid. Cook for 30 minutes until lentils are tender.

  4. Remove bay leaf and season with salt and pepper to taste.

  5. Serve hot, garnished with fresh parsley.
