How To Make Clean Eating Lentil Soup Recipe
A hearty and delicious soup filled with plant-based protein and fiber, perfect for a clean eating meal!

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 celery stalks, diced
- 2 carrots, diced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp ground turmeric
- 1 cup dried lentils, rinsed and drained
- 4 cups vegetable broth
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté for 2-3 minutes until softened.

Add celery, carrots, cumin, paprika, and turmeric. Stir to combine and cook for 5 minutes.

Add lentils, vegetable broth, and bay leaf. Bring to a simmer and cover with a lid. Cook for 30 minutes until lentils are tender.

Remove bay leaf and season with salt and pepper to taste.

Serve hot, garnished with fresh parsley.
