Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 potatoes, peeled & diced
  • 2 cups fish stock
  • 1 bay leaf
  • 1 lb cod fish fillets, cut into chunks
  • 1 cup heavy cream
  • salt and pepper, to taste
  • fresh parsley, chopped, for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add onion and garlic, sauté for 3 minutes.

  2. Add potatoes, fish stock, and bay leaf. Bring to a boil, then simmer for 15 minutes.

  3. Add fish fillets and cook for 5 minutes until cooked through.

  4. Remove bay leaf, stir in heavy cream, and season with salt and pepper.

  5. Garnish with fresh parsley before serving.
