Ingredients

  • 8 slices of bread
  • 8 oz ham, diced
  • 4 hard-boiled eggs, peeled and chopped
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tbsp dijon mustard
  • 1 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, mix together the ham, eggs, mayonnaise, Greek yogurt, dijon mustard, parsley, salt, and pepper until well combined.

  2. Toast the bread slices if desired.

  3. Spread the egg salad mixture onto four bread slices, then top with the remaining slices to form sandwiches.

  4. Cut each sandwich in half and serve immediately.
