Ingredients

  • 4 medium zucchini, spiralized into zoodles
  • 2 ripe avocados, peeled and pitted
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley leaves, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 cup grated parmesan cheese (optional)

Instructions

  1. In a blender or food processor, combine the avocado, lemon juice, basil, parsley, garlic, salt, and pepper. Blend until smooth.

  2. Cook the zoodles in a pot of boiling water for 2-3 minutes until tender, then drain and rinse with cold water.

  3. In a large mixing bowl, toss the zoodles with the avocado sauce until thoroughly coated.

  4. Optional: sprinkle with grated parmesan cheese before serving.
