How To Make Vegetarian Grilled Portobello Burger Recipe

Delicious vegetarian burger made with grilled portobello mushrooms, topped with avocado spread and served on a bun.

Ingredients

  • 4 portobello mushroom caps
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 4 burger buns
  • 1 avocado
  • 1/4 cup Greek yogurt
  • 1/4 cup chopped cilantro
  • 1 tsp lime juice
  • 4 lettuce leaves

Instructions

  1. Clean the portobello mushrooms and remove the stems.

  2. In a small bowl, combine the balsamic vinegar, olive oil, garlic powder, salt, and pepper. Brush both sides of the mushrooms with the marinade.

  3. Heat a grill or grill pan over medium heat. Place the mushrooms on the grill and cook for 4-5 minutes per side, or until tender.

  4. While the mushrooms are cooking, prepare the avocado spread. In a small bowl, mash the avocado with a fork. Stir in the Greek yogurt, cilantro, lime juice, salt, and pepper until well combined.

  5. Toast the burger buns on the grill for a minute or so.

  6. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by a grilled mushroom cap. Spread the avocado mixture on top of the mushroom, then add the top bun.

  7. Serve and enjoy!
