How To Make Portobello Sandwiches

Ingredients
- 4 large portobello mushrooms
- 4 crusty burger buns
- 4 slices of cheese (cheddar or Swiss)
- 1 red onion, sliced
- 1 bell pepper, sliced
- 4 lettuce leaves
- 4 tablespoons of mayonnaise
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions

Preheat a grill or grill pan over medium heat.

Remove the stems from the portobello mushrooms and gently scrape out the gills.

Brush both sides of the mushrooms with olive oil and season with salt and pepper.

Grill the mushrooms for about 4-5 minutes on each side, or until they are tender and juicy.

While the mushrooms are cooking, toast the burger buns on the grill or in a toaster.

Once the mushrooms are cooked, remove them from the grill and place a slice of cheese on top of each mushroom.

Return the mushrooms to the grill just until the cheese melts slightly.

Assemble the sandwiches by spreading mayonnaise on the bottom half of each bun.

Place a grilled mushroom with melted cheese on top of the mayo.

Top with sliced onion, bell pepper, and lettuce.

Place the top half of the bun on the sandwich.
