How To Make Vegetarian Breakfast Skillet Recipe
This delicious skillet breakfast is a wholesome vegetarian meal that will keep you full and satisfied all day!
Serves:
Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 2 cups frozen hash browns
- 1 can black beans, drained and rinsed
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper, to taste
- 4 eggs
- ½ cup shredded Monterey jack cheese
Instructions

Preheat oven to 400°F.

Heat oil in a large oven-safe skillet over medium heat.

Add onion, red bell pepper, and garlic, and cook until softened.

Add frozen hash browns, black beans, paprika, cumin, salt and pepper, and stir to combine.

Make four small wells in the skillet and crack an egg into each one.

Sprinkle cheese on top of everything.

Bake for 10-12 minutes, or until the eggs are cooked to your desired doneness.
