Ingredients
- 8 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 1 tbsp olive oil
- 1/2 cup diced onion
- 1/2 cup sliced mushrooms
- 1/2 cup diced bell pepper
- 1/2 cup diced tomato
- 1/2 cup shredded cheddar cheese
- Chopped fresh parsley for garnish
Instructions

In a large bowl, whisk together eggs and milk. Season with salt and pepper.

Heat olive oil in a large non-stick skillet over medium-high heat. Add onion and cook until translucent.

Add mushrooms, bell pepper, and tomato and cook until vegetables are tender.

Pour egg mixture into skillet, tilting to spread evenly. Cook until edges begin to set.
