Serves:

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 bell peppers, thinly sliced
  • 1 carrot, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 cup cauliflower florets
  • 1 cup green beans, cut into small pieces
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • 1 tsp ground coriander
  • Salt to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them splutter.

  2. Add onions and sauté until golden brown.

  3. Add bell peppers, carrot, zucchini, cauliflower, and green beans. Cook for 5 minutes.

  4. Add turmeric powder, garam masala, red chili powder, ground coriander, and salt. Mix well.

  5. Cover the pan and cook for another 10 minutes, stirring occasionally.

  6. Remove from heat and garnish with fresh cilantro.
